  • Number of days open per year
  • Number of services per day;

What are the sales figures for a 50-seat restaurant?

Let's take a concrete example: a 50-seat Italian restaurant specializing in pizza, with an average bill of €20. The establishment is open for lunch and dinner (2 services per day), 300 days a year, with a fill rate of 80%.

We obtain : 

👉 Sales = 300 days x 2 services x 50 covers x €20 x 80%.

Sales = €480,000

What are the sales figures for a 30-seat restaurant?

The calculation is exactly the same for a 30-seat restaurant!

Suppose a brunch restaurant offers an average bill of €25, with a 70% fill rate, and two services per day.

We obtain : 

👉 Sales = 300 days x 2 services x 30 covers x €25 x 70%.

Sales = €315,000

If you'd like to calculate your restaurant's sales over a shorter period than a year, simply use "28" days, "5" days, and so on. 

How much does a 50-seat restaurant earn?

To estimate how much you earn from your business, you need to calculate another indicator: net profit or net margin.

This profit is obtained by deducting all your costs from your sales (raw materials, team salaries, rent, insurance, taxes, digital marketing, etc.).

Let's go back to our example of the 50-seat restaurant selling pizzas. Its monthly sales are 28 days x 2 services x 50 covers x €20 = €56,000.

Now let's remove : 

  • Salaries (5 people paid €15/hour net 7 hours a day = €14,700) 
  • Variable costs (raw materials, supplies, packaging = €9,000)
  • Rent (€3,000 per month)
  • Equipment and maintenance costs (€1,000)
  • Insurance (€500)
  • Energy and internet costs (€250)

Gross profit = 56,000 - 19,569 = 36,431

Net profit (after deducting 20%) = 27,431

Net profit for this 50-seat restaurant is around €27,431 per month.
