Let's take a concrete example: a 50-seat Italian restaurant specializing in pizza, with an average bill of €20. The establishment is open for lunch and dinner (2 services per day), 300 days a year, with a fill rate of 80%.
We obtain :
👉 Sales = 300 days x 2 services x 50 covers x €20 x 80%.
Sales = €480,000

What are the sales figures for a 30-seat restaurant?
The calculation is exactly the same for a 30-seat restaurant!
Suppose a brunch restaurant offers an average bill of €25, with a 70% fill rate, and two services per day.
We obtain :
👉 Sales = 300 days x 2 services x 30 covers x €25 x 70%.
Sales = €315,000
If you'd like to calculate your restaurant's sales over a shorter period than a year, simply use "28" days, "5" days, and so on.
How much does a 50-seat restaurant earn?
To estimate how much you earn from your business, you need to calculate another indicator: net profit or net margin.
This profit is obtained by deducting all your costs from your sales (raw materials, team salaries, rent, insurance, taxes, digital marketing, etc.).

Now let's remove :
